There is snow in the mountains, Mt. Bachelor is open and the holiday season is upon us. In Bend, Oregon that means it’s time to get outside and enjoy the snow. Whether you choose to ski, snowboard or snowshoe, the best part of any snow day is your return to Pronghorn Resort for an après ski cocktail.
Sarah Desgrez, Pronghorn Food and Beverage Manager, is sharing a favorite après ski cocktail. “After a day on the slopes, there’s nothing quite as satisfying as stepping into a warm room or lodge with a fire roaring, and savory food,” says Sarah. “And of course, an après ski cocktail!”

Warm Spiced Vanilla Cocktail
4 cups milk (I use 2%, but whole would also be good)
1/4 cup pure maple syrup
1 (5-inch) cinnamon stick
1/2 teaspoon freshly ground nutmeg
2 star anise
1 vanilla bean (optional)
2/3 cup Thundermuck Coffee Liqueur from Pilot House Distilling
1/3 cup bourbon (like Maker’s Mark)
2 teaspoons pure vanilla extract
To a medium saucepan over medium-low heat, add the milk, maple syrup, cinnamon stick, nutmeg, and star anise. If using a vanilla bean, split it open and scrape out the seeds. Add the seeds and remainder of vanilla bean to the pan. Cook, stirring occasionally, until the mixture is hot and steaming. Reduce to low and heat for 5 minutes, being careful not to ever let it come to a full boil. Remove from heat. Place a fine-mesh sieve over a large heat-proof bowl and carefully pour the liquid over the sieve. Discard the solids. Add the liquid back to the saucepan. Stir in the coffee liqueur, bourbon, and vanilla extract. Enjoy!
