The Huntington Lodge at Pronghorn Resort is now open. Bend, Oregon’s newest luxury guest lodge offers 104 guest rooms, a year-round, outdoor pool, as well as many luxurious amenities for resort guests and members including an exciting new dining option, The Coyote, a tapas bar in the Lodge lobby and lounge area.

The Coyote will focus on small, tapas-like plates and handcrafted, signature cocktails. The menu will present dishes such as Tortilla Espanola, Dolmas, Prosciutto Wrapped Dates, Pork Pistachio Pate and Charcuterie sliced fresh on flywheel slicer in the bar. As in all of our restaurants, Pronghorn Resort Executive Chef Kevin Linde takes inspiration from several Central Oregon farms, bringing guests the very best and freshest ingredients, often sourced from a farm just down the road.

Look for refreshingly crisp cocktails like The Huntington, created by Pronghorn Resort Food & Beverage Manager Sarah Desgrez. The delightful and unexpected mingling of Hendrick’s gin, orange curacao, lime, Angostura and orange bitters, toasted juniper and dehydrated lime reflects the juniper forest that surrounds Pronghorn. Like the Lodge decor, several of the cocktails take their lead from the natural surroundings. Enjoy notes of juniper and gin mingling with citrus and sage. Your favorite classic cocktails will also be available, of course, but we invite you to try something new and signature to the Huntington Lodge as a way to escape the ordinary and enjoy a taste of the region.

The Coyote will also serve a fine collection of wines from around the world, including several Oregon wineries. Local craft beers will also be available, as well as wine on tap for your casual sunset gatherings around the Lodge’s outdoor fire pit.

The Lodge bar and lounge area is open and bright with soft seating to encourage gathering and socializing. As you walk through the front doors of the Huntington Lodge, you are invited to move through the lobby and into the bar and lounge area where a wall of windows offers stunning views of the Tom Fazio Championship Golf Course, an Instagram-famous ghost tree, and the Cascade Mountains beyond. You will also catch a shimmer of our new, year-round pool and hot tub. Adult guests may move freely between the indoor and outdoor spaces, making The Coyote the perfect meeting place for a 19th hole or drinks before heading to dinner in Cascada.
